Cooking with frozen food has a number of benefits.

Cooking with frozen food is convenient, as a number of frozen foods come pre-prepared and food can be cooked straight from the freezer. Easy portion control also means that cooking with frozen food creates less food wastage.

Interestingly, some categories of food retain higher nutritional value when they have been frozen commercially and defrosted at home for consumption. Using Vitamin C as a barometer for general nutritional value, a 2020 BBC documentary found that frozen onions had more than double the nutritional value of fresh onions. Brussel Sprouts had eight times the vitamin level of fresh sprouts. It was found that fresh food only contained a higher nutritional value when it had been picked or harvested very recently.
