
Curried Cod
Ingredients
- 1 tbsp olive oil
- 100 g frozen onions diced
- 2 tbsp curry powder
- 1 tsp frozen garlic
- 1 tsp frozen ginger
- 2 cans chopped tomatoes
- 1 can chickpeas
- 4 frozen cod fillets
- chopped coriander garnish
- 1 lemon juice to serve
Method
- Heat the oil in a large frying pan. Cook the onion over a high heat for a few mins, then stir in the curry powder, ginger and garlic. Cook for another 1-2 mins until fragrant, then stir in the tomatoes, chickpeas and some seasoning.
- Cook for 10 mins until thickened slightly, then top with the cod. Cook for another 10-15 mins until the fish is cooked through. Scatter over coriander, then serve with the lemon wedges to squeeze over.
