Curried Cod

  • 1 tbsp olive oil
  • 100 g frozen onions diced
  • 2 tbsp curry powder
  • 1 tsp frozen garlic
  • 1 tsp frozen ginger
  • 2 cans chopped tomatoes
  • 1 can chickpeas
  • 4 frozen cod fillets
  • chopped coriander garnish
  • 1 lemon juice to serve


  • Heat the oil in a large frying pan. Cook the onion over a high heat for a few mins, then stir in the curry powder, ginger and garlic. Cook for another 1-2 mins until fragrant, then stir in the tomatoes, chickpeas and some seasoning.
  • Cook for 10 mins until thickened slightly, then top with the cod. Cook for another 10-15 mins until the fish is cooked through. Scatter over coriander, then serve with the lemon wedges to squeeze over.
