Spanish rice & prawn one-pot

Ingredients

  • 1 tbsp olive oil
  • 100 g frozen onions
  • 150 g frozen peppers
  • 50 g chorizo
  • 1 tsp frozen garlic
  • 250 g basmati rice
  • 1 can chopped tomatoes
  • 500 ml boling water
  • 200 g frozen prawns thawed

Method

  • Fry the frozen onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins.
  • Stir in the rice and chopped tomatoes with 500ml boiling water, then cook over a high heat for 12 mins.
  • Stir in the thawed frozen prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.
