
Spanish rice & prawn one-pot
Ingredients
- 1 tbsp olive oil
- 100 g frozen onions
- 150 g frozen peppers
- 50 g chorizo
- 1 tsp frozen garlic
- 250 g basmati rice
- 1 can chopped tomatoes
- 500 ml boling water
- 200 g frozen prawns thawed
Method
- Fry the frozen onion, peppers, chorizo and garlic in the oil over a high heat for 3 mins.
- Stir in the rice and chopped tomatoes with 500ml boiling water, then cook over a high heat for 12 mins.
- Stir in the thawed frozen prawns, with a splash more water if the rice is looking dry, then cook for another min until the prawns are just pink and rice tender.
